Chickpea Breakfast Cake

I wanted to switch up my usual breakfast and came up with this “breakfast cake".” It’s high in protein which comes from the chickpeas, powered peanut butter and protein powder, and naturally sweetened with banana. Now you can feel good about eating cake for breakfast (: Although, I’m not opposed to eating any kind of cake for breakfast, who’s with me?

I wanted to switch up my usual breakfast and came up with this “breakfast cake".” It’s high in protein which comes from the chickpeas, powered peanut butter and protein powder, and naturally sweetened with banana. Now you can feel good about eating cake for breakfast (: Although, I’m not opposed to eating any kind of cake for breakfast, who’s with me?

Ingredients:

1/2 cup chickpeas
2 tbsp vanilla protein powder
3 tbsp powdered peanut butter 
3 tbsp gluten-free rolled oats
3 tbsp almond milk 
1/2 overripe banana 
1/2 tsp baking powder
Pinch salt 

Directions:
1. Add banana, chickpeas, & almond milk to food processor and process until smooth. 
2. Add remaining ingredients and process until combined.
3. Add mixture to ceramic dish and bake at 350 F for 15-20 minutes. OR Add mixture to microwave safe mug and microwave on high for 90 - 120 seconds. 
4. Allow to cool
