3 cups gf organic rolled oats
16 dates puréed with water
1 overripe puréed banana
1/3 cup cacao/cocoa powder
1 tbsp melted coconut butter (sub coconut oil)
1 tsp vanilla extract
If you prefer a sweeter granola, add maple syrup to desired sweetness.
1.Preheat the oven to 300 F.
2.Add dates, water and banana, to high-speed blender or food processor and blend until smooth. In large bowl, mix together rolled oats and cocoa powder. Add date and banana mixture, vanilla extract, coconut butter and salt and mix together.
3. Line a cookie sheet with parchment paper and spread the granola mixture out in a thin layer. Bake for 8-10 minutes then take out and let cool.
After baking, I added shredded coconut, chopped almonds, cocao nibs and goji berries!
